5 Minute Sesame Mushroom Toast
Serves 1 |
Mushrooms on toast is a great way to get some extra veggies in at lunchtime!

Ingredients
100g chestnut mushrooms (or any other mushroom)
1tbsp sesame oil
1tbsp soy sauce
2 Slices Sourdough Bread
50g red pepper houmous (or flavour of choice)
Chili flakes
Sesame seeds
Rocket
Fresh coriander
Method
1. Heat the oil on medium and fry the mushrooms until golden.
2. Add the soy sauce, and some chili flakes and fry on a high heat until the sauce has mostly evaporated.
3. Toast the bread and top with hummus and some rocket.
4. Add the mushrooms, some fresh coriander and sprinkle over some sesame seeds.
