Strawberry Cheesecake Overnight Oats

Serves 2 |

Ingredients


Oats Layer

60g Rolled oats

1 tbsp Chia seeds

2 heaped tbsp coconut yoghurt

125ml Milk (soya works well if vegan)

1 tbsp maple syrup (or other sweetener)

Strawberry Layer

100g fresh strawberries

1tsp yoghurt

Optional Toppings

Coconut yoghurt

Strawberry jam

1-2 Digestive biscuits (crushed)

Fresh strawberries


Method


1. Mix the oat layer ingredients together in a bowl, then transfer into a jar.

2. Mash the strawberries with a fork and mix with a tsp of yoghurt. Add this to the jar on top of the oat layer.

3. Cover and place in the fridge overnight.

4. In the morning, top with a dollop of yoghurt, a swirl of jam, a crushed digestive biscuit and some fresh strawberries.


Notes


*You can use plain/ Greek yoghurt instead if that’s what you have, but I’ve found that coconut yoghurt gives the best flavour.

*Pop the strawberries in the microwave for 10-20 seconds to soften them up before mashing them with a fork, this will make it much easier.
